Tempering via tabliering or seeding

Chocolate doesn’t have shine and smoothness on its own hence chocolatiers take the time to temper. Of course, conching does make chocolate particles fine but it’s tempering that turns the grains much finer so that they become undetectable to the tongue.

Proper tempering will give chocolates a glossy finish, firmness, smoothness, a longer shelf life, and a velvety texture. If you don’t temper, blooming may occur resulting in large crystals appearing on the face of the chocolates like whitish-gray spots. Chocolates will be crumbly and gritty and you cannot sell them.

Because chocolate loses its temper when it’s melted of if the temperature goes above 90F, you’ll need to temper again. Though you may be used to the ease of tempering machines, there may be emergency situations when you’ll be required to temper by hand. There are two techniques of tempering manually.

Tabliering or the marble-slab technique is a gift from the French. In this, the chocolate is worked upon on a heat-absorbing surface like a marble-slab to cool it to its correct tempering temperature.

In this method you’ll need a pound of chocolate and other utensils like a saw-toothed knife and a chopping board for cutting the chocolates into strips; a mixing bowl as receptacle for the molten chocolate; a double boiler for melting; and a rubber spatula for stirring and working the chocolate.

Melt the chocolate to its proper temperature on medium heat. Once finished, work half of the molten on the marble slab till it thickens and acquires its cooling temperature. The other half is slowly blended in until the whole becomes uniformly cooled.

Another method of tempering by hand is “seeding” and this is almost similar to tabliering except that you use tempered chocolate as “seed” from which the loose crystals in the chocolate melt can copy the bonding structures. Melt three-fourths of the chocolate strips and mix with one-third of the un-melted strips until everything’s melted and cooled to the proper temperatures.

In both method, keep temperatures constant while you’re working. You can use the molten chocolate to enrobe fruits for fruity chocolate candies or pour onto candy molds for a variety of chocolate shapes.

Tempering by hand is a tough process because you always have to be aware of and maintain temperatures correctly. Even master chocolatiers find this tough sometimes as it’s so prone to human error and outside factors. Since it also involves close attention, you’ll find your attention is actually divided between monitoring and designing, thus you may not have fun creating.

If your chocolates are for gifting or commercial purposes, a tempering machine will eventually be useful bar power outages as such hassles are avoided and you’ll consistently get high-quality chocolates.

Preffering to Live Together

It is seemly more and more apparent that pairs are no longer going for the aisle in hordes. People just don’t go in for marriage so much any more. It’s a bitwoeful really that this custom seems to be dying. Aside from those strong Christians, a church ceremony doesn’t always attract. It is more the full-dress, the presents and the party that brides look forward to. Of course everyone likes looking into the eyes of their beloved and announcing their love for them, but this doesn’t needfully have to be in the context of an established wedding ceremony. People think of marriage as a huge step, an ending of something in a way, though it is of course the starting of a new journey too. The fear is that the whole operation of marriage and divorce is a knotty and costly one and therefore shouldn’t be undertaken lightly. You have to be serious about marriage in order to have one, and this puts many people off. There is besides an anxiety of change for some people, who believe that marriage will put an unnecessary tension on the partnership. Others just don’t believe in it, and what it intends, preferring to just live in with their partner instead.

My Final Defeat - Fixed Competition

She probably can’t remember
and I know I can never forget…
the first time I saw her like that
I was only nine years-old
not naive by any stretch
having seen my share of tragedy-
my parent’s bitter battles in my first five years of life
then the inevitable end of their marriage
but not before 700 days of devastation called divorce
that destroyed dreams and deeply damaged hearts
I had no idea life could get worse…


But it did -


The day I found her passed out cold on the living room floor
I thought she was sleeping at first
In fact I swore she was just sound asleep
to my petrified little sister
whose big brown eyes screamed with fear
at the site of the lifeless body of our mommy
slobber dribbling out of the corner of her mouth
soaking her cheek below the dirt of her eye makeup
that trickled down her sallow skin on a face
devoid of any expression…


Is mommy dead?
a little voice whimpered
my sister weeped


My gut said Yeah she’s dead as a doornail


Thankfully my words said No No she’s not dead
as I carried my trembling, tiny sibling upstairs
and tucked her in bed with my promise
that Mommy would wake up in the morning…
as I wondered What if she didn’t?


Little did I know I would wonder again and again
for the next 20 years
who I would see when I came home from school…
my real mom - you know her - the sober, sophisticated lady -
or would I find that ugly, evil spirit
lurking within my mommy’s body again?


I loathed that demon who called me nasty names
and didn’t cook dinner or do laundry
I wanted to murder the monster that growled at me
slurring words, throwing things and
staggering through our house…


So confused, embarassed, shocked, and dazed
by how my mommy would really be two people


But I learned early -


Never ask questions…
about anything at all
Never tell…
anyone - not a soul
Never complain about the awful monster
for fear that it would take my real mommy away forever
Never trust anyone or even my tomorrows…
since nobody ever knew if the evil demon would be back
Never feel anything…
because it was easier to become completely numb
than to endure the endless pain and loss day after day…


When I got older, I thought I could deal better
but looking back now I know I was wrong…
It didn’t get easier, I just became paralyzed
behind the protective wall I built to be safe from her…


Nobody ever met the first boy I went on a date with
neither parent even knew his name
much less what kind of car I hopped into
or where we were supposed to be going…
Because my dad wasn’t around and she was drunk
and I was ashamed, so I stood by the front door
waiting for Tommy’s car to come down my street
and as soon as I saw it, I barged out the door
raced across the front porch, skipped the steps,
barely letting my feet touch the curb before
I bounced into his Chevy with my gleaming smile
that everyone knew me for -


The radiant face with the perpetually beaming smile
that I faked so often, it almost felt real…
My cheerful facade created to disguise
my actual agony and untold twisted torture


Today at 30 years-old, I have perfected my mysterious mask
as I cower behind my forced, dazzling smile
and feigned nature of blissful peace and normalcy


Nobody ever gets even a glimpse
of the real me - tormented by childhood memories
tossing and turning in my bed every night,
haunted by frantic flashes of bad dreams,
reeling in faithless feelings, lingering self-doubt, desolate disbelief, hopelessly


searching…
for explanations, answers
to my questions that haven’t changed in 20 years…


But anything close to understanding
seems to escape my emotional grasp
eternally eluding my ravished, raging mind
and sense of reason and logic…


I surrended myself to a continual, compulsive scramble
through a menacing maze of misconceptions
that I perpetuate with my naive expectations
for a miracle to magically reveal a meaningful response
to my endlessly, impossible questions…


If I could just find…
A solitary reason why
my mother has continued to choose alcohol over me
for more than 25 years…
Or a single clue to explain how
I can compete for her love when
my opponent is a lifeless, speechless, emotionless
loyal bottle of vodka…

Here is some witty poetry (not sure if that is the proper word: witty, but it will do): one poem on the Aztec year 2012, a year that has been in the public’s eye quite a lot; one on cloning, and the biblical end time events–which, if I may add seems ripe for the monster events that are said to take place; and two poems dealing with some tradtions of Peru; one imparticular, on vacationing, where not to go; all the makings for some thought.
